Good Agricultural Practices (GAPs) are those procedures designed to minimize the contamination of fresh produce with microbial pathogens in every step from production to food preparation.
How does it work?
The goal is prevention of contamination; once contaminated the removal or killing of pathogens on produce is very difficult. Prevention is strongly favored over treatments to eliminate contamination. Documentation of implementation of prevention programs and food safety awareness training for workers are key components of a food safety program.
